Les Sauterelles is the estate’s great classic. This Touraine Blanc is produced 100% from Sauvignon Blanc and Sauvignon Gris varieties. It’s the result of an assemblage of a large part of the property’s Sauvignon parcels. A fine example of what a Touraine Sauvignon can be!

About Les Sauterelles…

Henri Chapon’s opinion

From the very first sip, Les Sauterelles reveals a lively, refreshing personality that draws its inspiration from the subtle interplay of Sauvignon Blanc and Sauvignon Gris. The delicate imprint of Sologne’s sandy soils is expressed as a refined calcareous minerality underpinning notes of pink grapefruit and candied zest, further enhanced by a bewitching floral nuance of lily. A harmonious assemblage typical of the Touraine appellation, it delivers a structured palate with a powerful finish, each nuance eloquently telling the story of an outstanding terroir and masterful craftsmanship.

Les Marcottes is an ode to Gamay. Gamay is a capricious grape variety that requires the greatest possible attention if we don’t want it to play tricks on us! But it’s also wonderfully generous as long as we don’t let it do whatever it wants! The estate’s old Gamay vines are grassed so as to contain their natural ardour and are heavily pruned. The grapes are harvested by hand when fully ripe and carefully sorted. The ones that are kept are put into vats and macerated carbonically for two weeks. The result is a dense, concentrated, very fruity wine that requires ageing in vats for several months before fully coming into its own.

About les Marcottes…

Henri Chapon’s opinion

Les Marcottes is a perfect demonstration of Gamay’s ability to express its full complexity when nurtured with passion and precision. Produced from old vines planted on Sologne sands, it stands out for its brilliant fruitiness, melding red and black berries with a spicy hint of white pepper – a hallmark of the Touraine appellation. Meticulous vineyard management is reflected on the palate through balanced tannins and a long, evolving finish that invites continual rediscovery of its many facets.

Les Galipettes is a rosé wine for springtime – whence its name, which reminds us of the first “galipettes” (somersaults) we made as children, when the flowers blossomed again in the meadows. It’s a rosé resulting from direct pressing of Gamay, Pineau d’Aunis and Côt grapes. They’re harvested when fully ripe, so as to obtain a rosé wine that provides all the expected freshness and fruitiness, of course, as well as character and body. Les Galipettes is one of the estate’s curiosities and is produced in small quantities.

About les Galipettes…

Henri Chapon’s opinion

Les Galipettes, a rosé of rare elegance, is a testament to the masterly assemblage of the Gamay, Côt and Pineau d’Aunis grape varieties. Direct pressing preserves the wine’s intense freshness and vibrant fruitiness while providing it with distinctive depth and density. Its pale pink robe with golden highlights heralds an inviting nose featuring candy-like sweetness with raspberry and pink grapefruit notes, which translate into an elegantly juicy texture and subtly refreshing finish that ensure an irresistibly drinkable wine.

The Climats & Consorts

Climat N°1

Climat No.1 is a white wine produced from the estate’s finest parcels, classified as Touraine-Oisly. The Touraine-Oisly registered designation, a Touraine vintage, was created in 2011 in recognition of the harmonious marriage of this unique terroir and Sauvignon Blanc. Sauvignon Blanc’s characteristic aromas are enhanced by this outstanding terroir. Climat No.1 is vinified from fully mature grapes and aged for months on fine lees. It’s a wine that combines power, finesse and elegance and has no fear of the passing years. Quite the contrary!

About Climat N°1…

Henri Chapon’s opinion

Climat N°1, a product of the Touraine-Oisly area’s outstanding vineyards, captivates the senses with its aromatic complexity and remarkable finesse. The Sauvignon Blanc variety’s character, enhanced by the influence of Sologne’s sandy soils and flinty clays, unfolds in a delicate floral bouquet with hints of peach nectar and a subtle whisper of marzipan. After decanting, the wine reveals a round, rich palate with warm, powerful expression, culminating in a persistent finish that attests to its potential for graceful ageing.

Climat N°2

Climat No.2 is a white wine produced from a rigorous parcel selection of an almost forgotten grape variety: Menu-Pineau, still known as Orbois with an O! This old local variety has seen its territory nibbled away by Sauvignon over past decades. When he took over the estate, Lionel decided to destroy this parcel, but it resisted. The accidents of vinification decided otherwise…

About Climat N°2…

Henri Chapon’s opinion

Climat N°2 reinvents the Menu-Pineau, an age-old, almost forgotten variety, by unveiling the full richness and complexity of its terroir. Rooted in Sologne’s sandy soils, the vines produce remarkably low yields, so ensuring exceptional concentration. The nose is rich and creamy, with nuances of hazelnut and ripe fruit. Ageing, first in barrique barrels and then in stainless-steel vats, ensures harmonious integration of alcohol and a refined structure, resulting in a tasting experience that is both surprising and elegant.

Climat N°3

Climat No.3 is a red wine elaborated from one of Touraine’s oldest grape varieties: Côt, which is still called Malbec. To be more specific, in this particular cuvee, it’s Côt Garnon, a massal selection from the Cher Valley. The grapes come from a small parcel planted with old vines scraping by on sandy-clay soil where flintstones have also taken up residence. They’re harvested by hand as late as possible in the season in order to ensure the vintage’s maximum maturity. Ageing takes a full year, carried out slowly and gently in vats, and the wine is bottled on the eve of the next harvest.

About Climat N°3 …

Henri Chapon’s opinion

Climat N°3 is a refined expression of Côt Garnon, a variety emblematic of Touraine that thrives on flinty clay soils. Its intense ruby robe and purple edge herald an aromatic richness with hints of stewed fresh blackberries, smoky nuances and a touch of pepper, all of which blend seamlessly, enhanced by a delicate floral trail of violets. On the palate, its silky tannins and harmonious structure provide a persistent finish that reveals the wine’s full potential, an invitation to contemplation and the enjoyment of flavours that will evolve gracefully over the years.

ROSAM

Rosam is a rosé resulting from a delicate assemblage of several red grape varieties: Cabernet Franc, Gamay and Pineau d’Aunis. The vines are trained so as to obtain top-quality grapes, with constant concern for the impact that cultivation practices have on the natural environment. The grapes are harvested by hand. This wine is a “haute couture” rosé, combining finesse and aromatic complexity. It will be an ideal partner for your aperitifs and a harmonious companion to fish, white meats, grills and cuisines from elsewhere.

About Rosam …

Henri Chapon’s opinion

Rosam is a haute-couture rosé in which Cabernet Franc’s complexity, Gamay’s vivacity and Pineau d’Aunis’ unique character are blended with remarkable finesse. The assemblage’s delicate balance is reflected in a rose-gold robe of rare elegance and a fine floral nose with hints of rose and aniseed emphasised by a discreet minerality. On the palate, power and persistence combine to ensure that this wine provides a truly refined gastronomic experience.
